Back at the end of April we bought 6 piglets from our friend and fellow grass fed beef (and pig raiser) producer Hank Barlow. Hank crosses Gloucester Old Spot and Tamworth pigs and the end result is a pig that is very hardy, lives well outdoors and does a good job foraging on pasture and in the woods.
We harvested our first batch of pigs in October of 2009, and the response was so great that we bought a second batch (this time the pigs were Yorkshires, and we bought them from the Connecticut Junior Republic’s farm program). We raised the pigs over the winter, and harvested them in March of 2010. We added another batch from Hank’s farm, this a batch of purebred Tamworths and we will be receiving some more of Hank’s Tamworth/ Gloucester Old Spots in May.
We converted an unused walk-in cooler into a freezer and now have plenty of storage for our beef and now our pastured pork.
